Try this delicious yet easy to make organic brekfast wrap. Enjoy it with a cup of tea or coffee or serve it to the kids. This is a breakfast the whole family will love!
4 rasher bacon, rind removed
8 free range eggs
Small bunch parsley, washed and finely chopped
Salt & pepper to taste
8 small button mushrooms, washed and thinly sliced
Handful baby spinach or rocket, washed
4 x Australia’s Own Organic Oat, Rye and Linseed Wraps
1. Heat a frypan over high heat with a teaspoon of your preferred cooking oil. Add the bacon rashers and cook for a minute or two until crispy on one side, turn over and cook other side for another minute until crispy. Remove bacon and wipe pan with paper towel to remove fat. Keep the bacon warm.
2. Cook the eggs to your liking, sprinkle with the chopped parsley halfway through cooking. Fried or scrambled works well here, ensure they are a little under cooked as they will keep cooking after you remove them from the heat.
3. Lightly heat your wrap covered in foil in the oven on 150degrees for a minute, or in the microwave for 10seconds as this makes them easier to wrap up.
4. Lay one bacon rasher in the top two thirds of your wrap, top with spinach or rocket, mushrooms and 2 fried eggs or ¼ of the scrambled eggs, season with salt and pepper to you liking. Wrap the bottom third of the wrap up 1/3 way over the egg and bacon ingredients. Take one of the remaining sides and wrap over the top and repeat with other side. If eating breakfast on the move wrap in baking paper and tie with a little string.
