1 corn cob, cooked, corn cut off
1 tomato, chopped into 5mm cubes
1 small lebanese cucumber, chopped into 5mm cubes
1 x 400g tin kidney or mixed beans, drained and rinsed
1 red chilli, seeds removed and finely chopped (optional)
Handful of mint and coriander, finely chopped
Juice of 1 lime
1 tablespoon of olive oil
1 cup grated cheese
½ red onion, finely sliced
1 avocado, flesh scooped out and sliced
1 small cos lettuce, chopped
4 Australia’s Own Organic Quinoa Wrap, slightly warmed
1. For the salsa, mix all ingredients in a bowl, check seasoning and adjust with a glug more of olive oil or lime juice. Set aside in serving bowl.
2. Place all other ingredients into a serving platter to serve family style.
3. Top your wraps with some cos lettuce, a handful of cheese, a spoonful or two of salsa, a few slices of red onion and avocado. Wrap and eat fresh.
